Sweet cherry fruit with hints of violets. This wine displays an attractive purity of complex fruit flavours combined with elegance and finely grained tannins.
The Dufouleur family have been merchants since 1596, but it was very recently that the new generation represented by Yvan & Yann decided to start distributing the family estate wines. Yann looks after the export markets; Yvan does the winemaking. The 33 hectares of vineyards extend from Fixin to Santenay and include exclusive ownership of Fixin's" Clos du Chapitre " Premier Cru Vineyard. Average age of vines is around 30 years old. Vineyards farmed with sustainable farming methods (lutte raisonnée). Two annual tillings and light weedings. Yields are 55 hectalitres per hectare.
Hand picked and sorted manually in the vineyards. Cold maceration for one week followed by traditional vinification. 12 months ageing in casks (one third new).
Red meats, game dishes and cheese.
