Well textured and quite weighty Burgundy with notes of plum, anis and liquorice with balanced tannins and a lovely freshness of Pinot Noir fruit.
Sebastien Bidault makes the wines from this new Domaine comprising 11 hectares owned by his wife Anne’s parents in both Côtes de Nuits and Beaune. Great attention is given to the quality of the grapes in the vineyards which are farmed organically.
Lutte raisonnée, no pesticides or herbicides. Regular tilling of the soil to remove weeds.
Grapes are sorted and de-stemmed before fermentation which lasts between 15 to 20 days. Malolactic fermentation and ageing in barrel for 12 to 15 months.
Fillet of beef, rib and game birds.
