Winery information:Pierre Naigeon, who inherited this 120-year old estate in the mid-nineties, believes passionately in sustainable farming, without the use of any herbicide. He looks to produce wines full of fragrance, revealing the natural terroir. The average age of his vines is remarkably high, mostly over 50 years. This ensures deep roots, nourishing the vines from many different layers of soil, to produce the most complex wines, and reduces the natural level of cropping, providing more concentrated wines.
From parcels of vineyards planted with high density vines over 3,500 vines per hectare. The vines are Guyot trained. Organic fertilizers are used but the vinesare never treated with herbicides or insecticides.
Clay and limestone, with presence of large chalky pebbles.
Manual harvest followed by severe sorting on the sorting table. The vinification is done by gravity (without the use of a pump), with indigenous yeasts from thegrapes. Cold maceration is done before fermentation from 6 to 7 days, followed by natural fermentation (10 to 15 days) and ageing 'sur lies' for 14 months.
Characteristic raspberry fruit tones with spice and a good depth of flavour.
Every day serving suggestion:
Grilled meats, white meats in sauce, fresh cheeses.
