Tasting Note
Intense aromas of ripe raspberries and black cherries, then a wisp of smoke creeps in along with some hints of grilled cocoa beans. Before the wine hits
the palate, you know that you’re in for an explosion of flavours! Deep and intense, this wine slowly reveals its secrets - black cherries, dark chocolate, a
hint of clove and nutmeg - hugely rich and enveloping but with elegance.

Producer Details
This wine is made by Paul Boutinot whose love affair with the southern Rhône is both enduring and unswerving. They believe that they can make great wine there, and for this reason, they have bought their first vineyard in France, here in the southern Rhône – in the village of Cairanne. Ten years ago they first glimpsed the potential
of the vineyards of Cairanne when they released their 2000 vintage of La Côte Sauvage. Now they have several plots of old vines and they can begin to realise their dream of making even better wine. Over the past decade or so they have built enviable relationships with a network of local growers and they will of course continue to source grapes and wine from this trove of prized vineyards for their range of Rhône wines.

In The Vineyard
Grenache, Syrah and Mouvèrdre vines grow on two steeply terraced plots of limestone, granite and schist. Herbs grow among the vines, and behind this
scenic vineyard is the Dentelles de Montmirail (affectionately known as 'lace mountain' due to the series of ruggedly curved peaks at the top).

In The Winery
This rich and complex wine is made by traditional vinification. 50% of the wine has been barrel aged for 14 months in barrels of 2 and 3 years, just to give
another layer to the wine and a touch of vanilla pod.

Food Recommendations
Ideal with a good daube Provincal or game dishes. Also a treat with hard cheeses particularly farmhouse cheddar.
