Producer Note

The Dufouleur family have been merchants since 1596, but it was very recently that the new generation represented by Yvan & Yann decided to start distributing the family estate wines. Yann looks after the export markets; Yvan does the winemaking. The 33 hectares of vineyards extend from Fixin to Santenay and include exclusive ownership of Fixin Clos du Chapitre Premier Cru.

Vineyard

The Fixin 1er cru 'Clos du Chapitre' is one of the five 1er crus of the Fixin appellation. The property which was bought by the family in 1995 is completely surrounded by an old dry stonewall. The deep clay, limestone and marl soils are similar to the Grand Cru wines of the Côte de Nuits. The vines, which have an average age of 35 years, are trained to the simple Guyot method. The vineyards are farmed using sustainable farming methods, known as la lutte raisonnée in French, with the use of natural organic products to protect the environment and preserve the characteristic of the soil and subsoil. Two annual tillings take place, along with green harvests to limit yields.

Winemaking

The grapes were manually harvested with selective pickings in the vineyard. A cool maceration took place for one week, followed by a fermentation which lasted for two weeks. The wine was aged in oak barrels, of which one third was new oak for 12 months, during which time the wine underwent malolactic fermentation. The wine rested for two months in vats prior to being bottled.

Tasting Note

Complex notes of cedar and forest floor combine beautifully with intense aromas of violets, bramble fruits and ripe wild raspberry. Expressive on the palate, with good minerality, subtle spice and a balanced structure leading to a dry, firm finish.
