Up front blackberry fruits and spice followed by herbaceous notes. Great integration of tannins and fruit, a fantastically modern and versatile Bordeaux.
Producer Note
Château Fayau is a beautiful chartreuse style building surrounded by vines in the heart of the historic village of Cadillac. The 85 acre estate has been in the Medeville family since 1826 who carry on the proud tradition of making sweet botrytised wines and a traditional red Bordeaux blend. The vineyards are planted with Semillon, Sauvignon Blanc, Muscadelle, Cabernet Sauvignon, Merlot and Cabernet Franc vines.
Vineyard
Grapes were hand harvested from vines with an average age of 25 years. South facing vineyards on the slopes of Cadillac. Simple Guyot trained vines. Sustainable agriculture.
Winemaking
Fermentation in temperature controlled stainless steel took between 12 to 15 days. The wine was then filtered and matured in stainless steel tanks.
Serving Suggestion
An ideal accompaniment to roasted red meats, steaks and grilled meat dishes.
