Chateau Cissac 2007, Haut Medoc

In 1895, Jacques Mondon, a lawyer in Pauillac, acquired several vineyards in the parish of Cissac-Medoc. He combined these different vineyards under the name of Chateau Cissac. In 1940 Louis Vialard inherited the property from his grandparents Mondon and he set about the task of restoring the vineyards and the outbuildings as well as the family home. The château is of a particular architectural style, "Chartreuse" of the 18th century and is probably on the site of a Roman Villa.

Soil: Fine gravel over chalk

Planting density: 7,200 vines per hectare

Average production: 220,000 bottles per annum

Fermentation At 28/30C lasting an average of 5 weeks

Ageing: 18/20 months in oak casks; 30/40% of the wine is aged in new oak casks each year.

Taste: A full flavoured, reliable, robust and balanced Cru Bourgeois showing classic Bordeaux notes of cedar and tobacco.

Serve: At room temperature with roast and grilled red meats and cheese.
