Tasting Note

Lovely fruit purity and structure with rich, spicy and animal notes and firm but fine tannins.

Producer Note

Nicolas Rossignol was born in 1974, the 5th generation of his family to be involved in wine. After technical training in Beaune he worked in Volnay, Châteauneuf du Pape, South Africa and Bordeaux before returning to the family estate. In 1997, he purchased 3 hectares spread over Volnay, Pommard, Beaune, Aloxe-Corton and Pernand-Vergelesses. In 1998, he increased his vineyard holdings by another hectare. Today, Nicolas makes wine from his own estate, as well as from his father's vineyards (Domaine Familial Rossignol Jeanniard) bottling everything under the name Nicolas Rossignol. His wines have excellent body and rich tannins.

Guyot System. Sustainable farming methods. No use of weed killers. Pruning according to the Lunar calendar.

Fermentation lasts around 3 weeks. Wines are aged on the lees. Use of new oak can vary depending on the vintage. Delayed malolactic fermentation (after about 8 months) gives more complexity and structure. No racking, fining or filtration.

Serving Suggestion

Full flavoured meat and poultry dishes.

Pinot Noir 100%
