Cuvee du Papet, Clos du Mont Olivet 2000 - Chateauneuf du Pape,

Clos du Mont Olivet makes traditional Chateauneuf du Pape and Cotes du Rhone predominantly based on Grenache. The Domaine has been under the watchful eye of Jean-Claude Sabon and brothers Pierre and Bernard. A new generation is slowly taking over introducing changes. More recent vintages have been partially destemmed leading to greater accessibility and freshness while young, while retaining the traditional and concentrated style of these wines. A long maceration and soft extraction gives powerful but elegant wines.

Their flagship wine ‘Cuvet Papet' is only made in the top vintages, predominantly from Grenache with the addtition of Syrah and Mouvèdre. These wines have enormous extract and concentration, full of savoury spice flavours and with a wonderful complexity.Grapes: 100 year old Grenache, blended with Syrah and Mourvèdre.

Winemaking: 70% of the grapes are de-stemmed, fermentation then takes place in temperature controlled cement vats. Grenache, Syrah and Mourvèdre are fermented together, depending on the vintage. During fermentation the must is pumped over several times. The wine is pressed gently after 3 weeks and the free run juice is blended together with the pressed wine. The wine then goes through malo-lactic fermentation in cement vats.

Ageing: The wine is aged in cask and tank, it is then blended before bottling without fining or filtration.

Taste: Great extract and richness complex flavours include liquorice and earthy notes, with well integrated tannins.

Serve: At room temperature to go with meat dishes, game, stews and mature cheese.
