LOCAL SOIL CHARACTERISTICS

SCHOENENBOURG (The beautiful Hill) is one of the most prestigious sites in Alsace. Situated to the North of Riquewihr, the vineyard runs along the rather
steep south and south-east flanks of the hillside, at an altitude of 265 to 380 metres. It covers an area of 53.4 hectares, over a water-retaining subsoil of
keuper, marl, dolomite and gypsum, rich in fertilizing agents, overlaid with fine layers of quaternary siliceous gravel, Vosges sandstone and muschelkalk.
DOPFF "Au Moulin" owns 8.8 hectares.

VINIFICATION
Grape variety : 100 % RIESLING grapes, picked by hand on October 9TH 2007 with 13.6%vol potential alcohol
Grapes have been pressed entirely without crushing. Static racking of the must was followed by a slow temperature controlled fermentation. Later the wine
was stored in old oak casks on fine lees during several months. Finally this wine was bottled in December 15th 2008.

Acidity: 4.5 g/l (sulf) – 6.92 (tart.)
Shelf life : 10 to 12 years

TASTING
Appearance : pale golden colour
Nose : fine, floral and fruity nose
Taste : ample entry, rather full bodied, well balanced wine with a long and strong acidity. The final shows some over-ripe notes with slight pineapple aromas.

TO SERVE WITH
It goes well with oysters, shellfish and trout "au bleu". Indeed it is excellent with all fish whether served in a wine sauce, meunière, grilled, braised,
poached, fried, in aspic, as quenelles, or as a fish stew.
