Producer Note

The Moutard family has been making wine since 1642. François Moutard's 21 hectares of vines are located in Buxeuil on the Côte de Bar, the highest region in Champagne. Over the generations the Moutard family has explored the potential of the different terroirs, maintaining traditions while experimenting with different grapes varieties. François is one of the very few growers who can produce a Champagne - 6 Cépages - which is made up of the six permitted grape varieties: Pinot Noir, Pinot Blanc, Pinot Meunier, Chardonnay, Petit Meslier and Arbane.

Vineyard

The Côte de Bars in the Aube department of Champagne region, is the highest Champagne producing area, the most southern and the closest to Burgundy. Pinot Noir thrives particularly well here, on the clay and limestone soils. This terroir is unique in Champagne and is very similar to the Chablis soil, with Kimmeridgian chalk and clay which impart pure and mineral complexity to the resulting wine. The vineyards are ploughed and fertilised during the winter months, using preparations from animal and mineral origins. The vines are pruned during the first fortnight of March using the Guyot method. Once the grapes have reached optimum phenolic ripeness, they are harvested by hand.

Winemaking

Manually harvested, the grapes were gently pressed in a pneumatic press, followed by a cold settling at 7°C. Fermentation took place in temperature controlled tanks between 18°C and 20°C, to maintain the integrity of the primary aromas. Produced according to the traditional Methode Champenoise, the secondary fermentation took place in the bottle at 15°C. This elegant Grand Cuvée Champagne then spent a minimum of three years on its fine lees.

Tasting Note

A fine, rich cuvée with a Pinot Noir base, it has a delicate mousse combined with a developed nose of butter, almond and brioche. Aged for three years on its fine lees, it has a toasty complexity and a long elegant finish.

Serving Suggestion

The perfect apéritif, this versatile wine also has the character to accompany many foods, canapés, terrines, smoked salmon and lightly spiced Asian cuisine.
