The Moutard family has been making wine since 1642. François Moutard's 21 hectares of vines are located in Buxeuil on the Côte de Bar, the highest region in Champagne. Over the generations the Moutard family has explored the potential of the different terroirs, maintaining traditions while experimenting with different grapes varieties. François is one of the very few growers who can produce a Champagne - 6 Cépages - which is made up of the six permitted grape varieties: Pinot Noir, Pinot Blanc, Pinot Meunier, Chardonnay, Petit Meslier and Arbane.
The vine age varies from 10 to 20 years old. Pruned in early March, the Pinot Noir is pruned according to the 'Guyot' method, while the Chardonnay is trained in the 'Chablis' method. The vines are ploughed and fertilised during the winter months using preparations from animal and mineral origins.
The carefully selected grapes were pressed gently in a penumatic press, prior to a cold settling at 7°C. Alcoholic fermentation took place in temperature controlled stainless steel tanks at a temperature of between 18°C and 20°C. Produced according to the traditional Methode Champenoise, the secondary fermentation took place in the bottle at 15°C. The Champagne was aged on its fine lees for a minimum of three years. Dosage is 10g/l.
Made from a harmonious blend of Pinot Noir and Chardonnay, this Champagne has a fine mousse with a lovely, fine and biscuity character on the nose and palate which lasts through to the finish. Very elegant.
This champagne will pair beautifully with oysters, shellfish and delicately flavoured white fish. Its roundness and depth will also accompany dishes in a cream sauce and lightly spiced cuisine.
