One of the very few Champagnes produced from the six varieties permitted for the appellation. Very steady bubbles complement the biscuity and citrus fruit flavours in this medium bodied wine. Complex, refined and elegant.
The Moutard family has been making wine since 1642. Since then they have always been keen on exploring the potential of different terroirs maintaining traditions as well as experimenting with different grapes varieties. Francois Moutard's 21 hectares vineyard are in Buxeuil at the extreme south east of Champagne on the Côte des Bar. Francois is one of the very few growers who can produce a Champagne 6 Cépages - which is made up of the six allowable grape varieties : Pinot Noir, Pinot Blanc, Pinot Meunier, Chardonnay, Petit Meslier and Arbane
10 to 20 year old vines. Vines are pruned during the first fortnight of March using the Chablis method. Vineyards are then ploughed and fertilised during the winter months. Hand harvested.
This terroir is unique in Champagne and is very similar to the Chablis soil, with Kimmeridgian chalk and clay which gives pure and mineral characters to the wines.
Hand harvesting was followed by traditional pressing. Alcoholic fermentation took place in oak barrels formerly used to produce Meursault, Chassagne and Puligny Montrachet. The wine did not undergo malolactic fermentation in order to keep its purity. Aged for a minimum of three and a half years.

This high end and complex Champagne will accompany white fish, lobster, chicken in creamy sauces, or a white truffle risotto.
