Winemaker’s Comments: This Viognier shows a full expression of the variety - fruity, fresh, well balanced and very easy to drink. On the nose there areripe apricots, pineapple, peaches and hints of citrical flowers. On the palate it is very aromatic following on from the aroma, with a soft texture, and a refreshing finish.Variety: 100% ViognierRegion: Central ValleyClimate & Soil: Semi-arid Mediterranean climate, with an annual average rainfall of 400 mm, concentrated in winter. Warm and dry summers, withgreat thermal oscillation between day and night. In this strip of land, located at the foothills of the Andes, night temperatures tend to be lower because ofcold air that flows down from the mountains, causing a daily thermal oscillation. The vines grow on alluvial origin soils, stratified and slightly sloped with medium depth and texture with basic pH.
Vinification: The grapes were picked late March to ensure the ripeness and varietal flavours, crushed and immediately pressed. Free-run and low pressure juiceswere used for production in order to secure maximum fruit concentration and a good acidity balance which is a characteristic of this variety. A long fermentationtook place at 14°-15°C for 3 weeks. After fermentation, the wine was kept in contact with the lees for two weeks to increase complexity and gain softness.
Suggested Food: Sushi, Chinese foods and salads.
