Producer Details

With 250 hectares of Institute for Marketecology (IMO) and Demeter certified organic vineyards and a further 250 hectares in conversion, Emiliana is one of the world’s most important producers of Organic and Biodynamic wines. Their spectacular Biodynamic vineyard and winery at Los Robles is a model that attracts visiting Viticulturalists and winemakers from all over the world. Jose Guilsasti (viticulture) and Alvaro Espinosa (winemaking) were key to establishing this project but there is a wealth of young talent involved. These innovative wines are made with great care and attention and the results are inspiring. The flagship Coyam has already become one of Chiles iconic wines but the whole range excels.

In The Vineyard

Casablanca Valley can be identified by its closeness to the Pacific Ocean, influenced by the coastal breeze, which moderates temperatures. The land is basically formed by hills that increase in height as it goes east towards the Coastal Mountain Range. It has an alluvial origin, with sandy textures of high permeability, poor and shallow, which causes the valley to have low yields, compared to others. The temperatures are colder and templates, causing a slower ripening in the fruit and, in consequence, great character in flavor and aroma, for white varieties like Chardonnay and Sauvignon Blanc. In the winery the grapes were hand-picked on the first week of March, when they reached the desired ripening. The grapes come from vineyards in Casablanca, where they are VSP-trained and yield 10 tons per hectare. The vinification process took place in their Maipo Valley white-wine facility in Buin, using stainless steel tanks, selected yeasts, low fermentation temperatures, pump-overs and gentle lees stirring to ensure the optimal results.

Food Recommendations

The citric touches to this Sauvignon Blanc work well with all types of sushi and Mediterranean flavours such as goats cheese salad or smoked ham.
