Fixin 1er Cru Clos du Chapitre 2007 - Domaine Guy and Yvan Dufouleur

The Dufouleur family have been merchants since 1610, but it was only a year ago that the new generation represented by Yvan & Yann decided this year to start distributing the family estate wines. Yann sorts out the export markets; Yvan does the winemaking. They are a good team, and the wines are excellent.

The vineyards extend from Fixin to Santenay and include exclusive ownership of Fixin’s "Clos du Chapitre" Premier Cru.

Cultivation method : 2 annual tillings and light weedings to contain grass development. Use of phytosanitary organic fertilizers. Thin out the leaves.

Harvest : green harvest before and manual quality selective picking in the vineyard.

Average yield : 39 hl / ha.

Vinification : total de-stemming, cool maceration for one week and fermentation for 2 weeks

Maturing : oak barrel ageing (1/3 new oak) for 13 months including malo lactic fermentation, and 2 months vat resting before bottling.

Style : Great and authentic wine (liquorice, leather and red/black fruit nose), powerful, good balance and beautiful palate length. Great ageing potential.

Table : ideal with red meats, game dishes and cheese.
