The Dufouleur family have been merchants since 1610, but it was only a year ago that the new generation represented by Yvan & Yann decided this year to start distributing the family estate wines. Yann sorts out the export markets; Yvan does the winemaking. They are a good team, and the wines are excellent.
The vineyards extend from Fixin to Santenay and include exclusive ownership of Fixin’s "Clos du Chapitre" Premier Cru.

Use of phytosanitary organic fertilizers. Thin out the leaves.Harvest : green harvest before and manual quality selective picking in the vineyard.Average yield : 39 hl / ha.Vinification : total de-stemming, cool maceration for one week and fermentation for 2 weeks Maturing : oak barrel ageing (1/3 new oak) for 13 months including malo lactic fermentation, and 2 months vat resting before bottling.Style : Great and authentic wine (liquorice, leather and red/black fruit nose), powerful, good balance and beautiful palate length. Great ageing potential. Table : ideal with red meats, game dishes and cheese.
